1. Twice Baked Potato with Egg
It’s a simple and cheap dish, but so tasty. Take 2-3 baking potatoes which have been baked in the oven and cut each potato in half. Scoop out the centers carefully. Mash up the insides with milk and cheese. Break 1 egg into each hollow and cook 10-15 minutes. Dress a dish with green onions or dill.
Shakshuka has a Tunisian or Algerian origin. It’s eggs poached in a sauce (tomatoes, red peppers and onions). It can be spiced with cumin. It’s not difficult to make this dish. Warm the olive oil, then add tomato paste, garlic, red peppers, cumin and salt to taste. When the peppers are soft – add the tomatoes and cook for at least 10 minutes. Then make little indentations in the sauce and crack an egg into each. Cook until the whites are gently set and serve Shakshuka with bread.
Egg frittata is a perfect dish because it’s cheap, easy, healthy and you can add any ingredients you like! It can be a vegetable or meat frittata. This dish is baked in a skillet. For the tastiest frittata you need to warm olive oil at first, add onions and cook for 3-5 minutes for a better taste. Then add any vegetables you like (tomatoes, peppers, eggplants, zucchini etc.). Also you can add meat or sausages. Cook until ready. Make a mixture of eggs, milk and cheese, then pour this mixture over ingredients. Cook until edges are set and then put skillet into the oven and bake until the top of the frittata is set (10 -12 minutes). Cut into wedges and enjoy!
4.Huevos Rancheros Salad
This is an interesting Mexican recipe built around eggs. Take a big tortilla and put it on a plate. Add lettuce salad, corn, beans, tomatoes with onions, make avocado pasta or just slice an avocado and add it to a salad. Dress with vinegar and tabasco. Then cook eggs (one or two) and put over a salad. Here you go!
5. Baked Eggs with Spinach and Tomato
Heat oil in a saucepan. Add onions, spinach, tomatoes, peppers, paprika and hot sauce. Cook for 5 minutes. Put these ingredients in a bowl, then crack eggs into the bowl. Dress with basil or dill, also you can add cheese. Put in the oven and cook until whites are set but yolks remain soft (12-15 minutes).
6. Scrambled Eggs with Chives
Take 3-4 eggs. Beat eggs in a bowl, add chives, salt/pepper and wire whisk until well mixed. Heat butter and milk in a skillet and then pour in the egg mixture. Cook it, stirring, for 6 to 8 minutes. When a dish is ready, serve it with additional chives. Put some bread or toast on the side to finish.
7. Spaghetti With Herbs and Eggs
Eggs and herbs will give spaghetti a unique taste. Cook spaghetti. Put the garlic, onions and herbs in a skillet and cook for at least 6 minutes. Add boiled spaghetti and feta cheese, cook for 5 minutes and serve on a plate. Then add an egg on the top. It can be a fried egg or eggs benedict, which ever you like more.
8. Friseé With Bacon and Soft-Cooked Eggs
This is an easy but very tasty salad. Cook the bacon over medium heat until crisp (6-8 minutes). Boil 2-3 eggs for 6 minutes, they need to be soft. Place the frisée in a bowl, add bacon, cut eggs in a half and add to the salad. Dress with vinegar, black pepper and enjoy. A perfect salad for your working day.
9. Chicken and Potato Hash with Fried Eggs
If you’re really hungry or want to make something tasty for your man – this recipe will be a great choice. Heat oil in a large skillet, add onions and cook until soft. Add the potatoes, ½ cup of water and cook for 10-15 minutes. Add chicken, salt and pepper and cook until ready. Transfer the food to a plate. Now make the eggs in a skillet. Heat the butter, crack eggs and cook until the edges are brown and the egg centers softly set, then serve over the hash. Add herbs to taste.
10. Eggs Benedict with Salmon
This recipe is my favorite and is definitely the tastiest one. At first prepare spinach. Melt the butter in a saucepan, add the spinach and stir until it’s wilted (2-5 minutes). Spread the spinach mixture on the toast. Top each with slices of the salmon. Prepare water for eggs. Add the vinegar to the simmering water. Crack an egg into a cup, then pour it into the water. Simmer until the whites are set. Remove with a spoon and place on a plate or paper towels. Trim away the ragged white pieces. Place an egg on top of the salmon toast. Dress with vinegar and herbs.
